These Rainbow Fruit Popsicles are the perfect summer treat that can be enjoyed as a light and refreshing snack. They are made with fresh fruit and naturally sweetened with honey.

Why you’ll love this recipe

These popsicles are dairy free and low in sugar. I’m all for decadent, full fat desserts, but sometimes in the summer when it’s 90+ degrees outside, you just want a light and refreshing snack, which makes this recipe the perfect choice!

You can mix and match the fruits you use to make these. I wanted to make a rainbow, because I knew my daughter would love them, but any fruit/color combo will work. Mango, strawberry, and pineapple would be a great combo!

You can use the leftover fruit purees in smoothies. Depending on how much you fill each popsicle mold, you may be left with a few tablespoons of each flavor. You can freeze it and blend it into your next smoothie.

How to make these popsicles

  1. In a high speed blender, blend the fruit, coconut milk, and honey.

  2. Repeat with the remaining fruits.

  3. Pour into a popsicle mold, freezing about 15 minutes between each fruit layer.

  4. Place the lid carefully on the mold and insert the popsicle sticks.

  5. Freeze for several hours, or overnight.

  6. Unmold the popsicles and enjoy!

Tips on making this recipe perfectly

  • Adjust the amount of honey if needed. Depending on the ripeness of the fruit that you are using, some flavors might need more honey, and some might need less.

  • Use full fat coconut milk for this recipe. The more fat, the creamier the popsicles will be.

  • When layering the flavors of the popsicles, freeze for 15-20 minutes between each flavor to achieve the layered effect. Even if the flavors marble a bit, no worries, they will still be delicious!

  • Before un molding the popsicles, place the mold in warm water for a minute or so to help loosen the popsicles. This will make it easier to remove them without them breaking.

Ingredients

Rainbow Fruit Popsicles
  • 1/2 cup (140 g) pineapple, cubed
  • 1/2 cup (140 g) mango, cubed
  • 1/2 cup (140 grams) strawberries
  • 1/2 cup (140 grams) kiwi, peeled and cubed
  • 1/2 cup (140 grams) blueberries
  • 2 1/2 cups (600 grams) full fat coconut milk, divided
  • 10 tablespoons honey, divided

Instructions

Rainbow Fruit Popsicles
  1. In a high speed blender, blend each fruit individually with a 1/2 cup of coconut milk, and about 1-2 tablespoons of honey. 
  2. Adjust the sweetness for each fruit to your liking.
  3. Set up you popsicle mold on a flat surface in the freezer. 
  4. Depending on how many layers you are doing, start by pouring your first fruit layer in each mold. 
  5. Freeze for 15-20 minutes before pouring the next layer. 
  6. Repeat with each additional flavor until the popsicle mold is full.
  7. Place the lid on the mold and insert a popsicle stick into each pop.
  8. Freeze for several hours, or overnight until firm.
  9. Un mold the popsicles and enjoy!
