When it comes to the holidays, two desserts usually come to mind, pie and cookies. So why not combine the two and make the ultimate festive cookie, pecan shortbread cookies with that gooey pecan pie filling we all love!

How to make pecan pie cookies

These cookies are very easy to make but they do require a few specific steps in order for them to work. The dough can be very sticky, so it needs to be chilled in between steps. The cookies also need to be par baked before the filling goes in, so it does not bubble over and just bake into the cookie. This way you get a buttery shortbread cookie with a pecan pie center.

  • Cream the butter and sugar together.

  • Beat in the egg, and stir in the flour, pecans, and salt.

  • Chill the dough

  • Scoop the dough and roll into rounds, dredge in sugar and press a well into the center. Chill the dough again.

  • Par bake the cookies for 10 minutes, remove from the oven and fill with pecan pie filling.

  • Bake cookies for another 5 minutes.

Tips on making this recipe perfectly

Chill the dough before and after scooping. This dough is very sticky and soft, so chilling it will make it easier to work with and also help the cookies not spread too much when they are baked.

Use coarsely chopped pecans for best results, this will help more pecans fit into the center filling.

Lightly toast the pecans to bring out more flavor.

Par bake the cookies before filling, this way the filling wont bubble over too much and bake into the cookie.

How to store pecan pie cookies

These cookies will last 2-3 days in an airtight container at room temperature.

They also freeze well and can be frozen for up to 2 months. Just defrost for several minutes before serving, no need to warm them up again.

Ingredients

Pecan Pie Cookies
  • 1/2 cup (85 grams) pecans, chopped
  • 6 tablespoons unsalted butter
  • 1/2 cup (100 grams) brown sugar
  • 1 egg
  • 1 cup (130 grams) all purpose flour
  • 1/2 teaspoon salt
Pecan Pie Filling
  • 1/2 cup (85 grams) pecans, chopped
  • 3 tablespoons brown sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons corn syrup
  • pinch of salt
  • 1 small egg

Instructions

Pecan Pie Cookie
  1. Preheat the oven to 350 degrees F. Line a sheet pan with parchment paper and set aside.
  2. In a medium bowl cream the butter and brown sugar together.
  3. Beat in the egg until combined.
  4. Add the flour, salt, and chopped pecans, and mix just until a dough forms.
  5. Chill the dough for 1 hour.
  6. While the dough is chilling, prepare the filling.
  7. Stir the pecans, brown sugar, egg, and corn syrup together and set aside.
  8. Scoop the dough into rounds using a tablespoon.
  9. Roll each piece of dough and dredge in granulated sugar.
  10. Place on a sheet pan, and press  into the center of each cookie making a well.
  11. Chill the dough until firm about 10-15 minutes.
  12. Bake the cookies for 10 minutes.
  13. Remove the cookies from the oven and place about 1 full teaspoon of the pecan pie filling in the center. 
  14. Bake for another 5 minutes.
  15. Cool before serving

Notes:

Store cookies in an airtight conainer for 2-3 days.

Cookies can be frozen for up to 2 months.
