Tips on making this recipe perfectly

  • Spray the mini muffin pan very well with non stick cooking spray, this will make it easy to remove the cookie cups after they are baked.

  • Let the cookie cups cool completely before removing them, they will be fragile when they are hot. To remove them easily, gently twist the cups in the pan and carefully pull out.

  • Chop the chocolate chunks finely for the cookie dough. Because these cups are small, large pieces of chocolate will effect the final shape of the cup.

  • Make sure the cookie cups are cool before filling with Nutella.

Ingredients

Hazelnut Chocolate Chip Cookie Cups
  • 1/2 cup (113 grams) unsalted butter, melted and cooled
  • 1 medium egg
  • 1 cup (200 grams) granulated sugar
  • 1 1/4 cup (120 grams) hazelnut flour
  • 1 cup (237 grams) oat flour
  • 1 teaspoon baking powder
  • 1/2 cup (80 grams) semi sweet chocolate, finely chopped
  • 1 jar Nutella
  • Sea salt for garnish

Instructions

  1. Preheat the oven to 350 degrees F. Spray a mini muffin pan well with non stick cooking spray.
  2. Melt the butter in a small sauce pan and cool.
  3. In a medium size bowl, cream the butter and sugar until fluffy 1-2 minutes.
  4. Beat in egg until combined.
  5. Stir in the hazelnut flour, oat flour, baking powder, and chopped chocolate.
  6. Scoop the dough into teaspoons, roll in a ball and place in the muffin pan.
  7. Bake for 10-12 minutes until the dough is lightly golden and puffs up.
  8. When the cookies come out of the oven, press in the center with your thumb to make a well.
  9. Cool completely and twist to un mold. 
  10. Once cookies are cooled, place Nutella in a piping bag fitted with a small fluted pastry tip and fill the cookie cups.
  11. Garnish with sea salt.
