Flourless Almond Butter Brownies

These almond butter brownies are decadent and fudgy, with swirls of almond butter throughout. They are naturally gluten free, and made with dark chocolate and cocoa powder for that extra chocolatey flavor!

I am always looking for a way to spruce up a brownie recipe. These brownies are extra fudgy and rich thanks to the addition of almond flour. If you’re looking for a nut free version, you’ll love these Classic Fudge Brownie or if you prefer a cakey brownie try this Turtle Brownie Skillet. How to make these brownies

  • Melt the chocolate and butter together over a double boiler.

  • Sift the dry ingredients together, and fold into the melted chocolate.

  • Spread batter into a greased pan.

  • Spoon the almond butter onto the batter, and with a skewer or knife, swirl the almond butter through the batter.

  • Bake and enjoy!

Tips on making this recipe perfectly

  • Use a high quality dark chocolate if available. Chocolate is one of those ingredients that makes a big difference in a recipe when it’s a better quality. I love brands like Valrhona and Cocoa Barry if you really want to go all out, but my go to is Trader Joes, or Whole Foods brand of chocolate chunks. The price can’t be beat and they are super fluid when they melt (which means they contain more cocoa butter!).

  • Use almond flour not almond meal for a smoother brownie texture.

  • If you don’t have any almond butter on hand, you can always use peanut butter for swirling or any other nut butter that you prefer.

  • Let the brownies cool before cutting, I even throw them in the fridge for about 30 minutes or so before I cut them. These brownies are extra fudgy and they will fall apart if they are cut while they are still hot.

Ingredients

Flourless Almond Butter Brownies
  • 1 1/4 cup (240 grams) granulated sugar
  • 3 medium eggs
  • 1 1/4 cup (185 grams) dark chocolate, chopped
  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (75 grams) almond flour
  • 2 1/2 tablespoons cocoa powder, sifted
  • 1/2 cup (120 grams) almond butter

Instructions

Flourless Almond Butter Brownies
  1. Preheat the oven to 350 degrees F. Line a 9x13 inch baking pan with parchment paper and grease lightly.
  2. Place the chopped chocolate and butter in a medium size bowl and melt over a double boiler.
  3. In a mixer with a whisk attachment, whip the eggs and sugar until tripled in volume.
  4. Pour the melted chocolate into the whipped eggs all at once. Mix to combine.
  5. Mixx the almond flour and cocoa powder into the batter.
  6. Pour into prepared pan and spread evenly.
  7. Drop spoon fulls of almond butter across the batter, and with a knife swirl it into the brownie batter.
  8. Bake for 20-25 minutes or until a skewer comes out with just a few crumbs on it.
  9. Cool before cutting.
