Monster Brownie Cookies

Loaded with oats, chocolate chips, and peanut butter M&M’s, the ultimate combination of the classic monster cookie and fudgy brownie!

What are Monster Cookies?

Monster cookies are peanut butter and oatmeal cookies, loaded with chocolate chips and M&M’S. They are believed to be called monster cookies because of the mashup of ingredients, just like Frankenstein.

This recipe for monster brownie cookies is the best of both worlds, half monster cookie, half brownie. Some might even call them Monster Brookies!

Monster cookies typically have peanut butter in the dough, but as a twist I used peanut butter M&M’s on top instead. These cookies are soft and chewy and the ultimate sweet treat!

Tips on making these cookies perfectly

  • Make, scoop, and chill each cookie dough ahead of time. It will be much easier to roll them together if they the dough is firm.

  • Place the M&M’s on top of the cookies after they come out of the oven. Right when they are pulled from the oven, carefully arrange the candies onto the cookies, the heat from the cookies will make them stick. If placing the candies on before the cookies bake, they dough will spread, and so will the M&M’s, and they will not be evenly distributed. Placing them on after will result in a prettier, more evenly decorated cookie.

  • Do not over bake these cookies. They are meant to be soft and chewy, and keep in mind the residual heat from the pan will also continue to “bake” the cookies even after they are out of the oven. The cookies should be set around the edges, and slightly gooey in the center..

Storing these cookies

  • Both cookie doughs can be made several days before baking and stored in the fridge.

  • The cookies can be scooped and assembled and stay in the fridge for 1-2 weeks, and in the freezer for 6-8 weeks.

  • Once the cookies are baked, they can be stored in the fridge or freezer for the same amount of time.

  • Baked cookies can also stay room temperature in an airtight container for 1-2 days.

Monster Brownie Cookies

Monster cookie dough

Ingredients

1 cup (136 grams) all purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (113 grams) unsalted butter, melted

2/3 cup (135 grams) brown sugar

1 large egg yolk

1 tablespoon sour cream

1/2 cup (50 grams) rolled oats

1/2 cup (80 grams) grams semi sweet chocolate chips

1 cup (85 grams) peanut butter m&m’s

Instructions

  1. In a mixer with a paddle attachment beat the melted butter, and brown sugar.

  1. Beat in the egg yolks and sour cream.

  2. Mix in remaining dry ingredients and chocolate chips until fully combined.

  3. Chill until firm.

Brownie Cookie

Ingredients

3/4 cup (100 grams) semi sweet chocolate

3 Tablespoons (42 grams) unsalted butter

1 medium egg

1/2 cup (100 grams) granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

4 1/2 tablespoons (35 grams) all purpose flour

Instructions

  1. Melt the semi sweet chocolate and butter over a double boiler.

  2. In a mixer fitted with a whisk attachment, whip the egg and sugar until light and fluffy.

  3. Pour the chocolate mixture in with the egg and sugar. Mix to combine.

  4. Fold in the flour, salt, and baking powder. The dough will be very soft.

  5. Chill for several hours so the dough will have time to firm up.

Monster Brownie Cookie Assembly

  1. Preheat oven to 350 degrees F. Line a sheet pan with parchment paper. Set aside.

  2. To assemble the monster brownie cookies, take about a teaspoon of each cookie dough, and roll them together, they do not need to be completely marbled, it is ok if the cookie is half and half of each dough.

  3. Place about two inches apart on the sheet pan and press down slightly. Place about 4-5 m&m’s on top of each cookie. It may seem like a lot, but the cookies will spread a bit and candies will also spread out.

  4. Bake for 10-12 minutes or until very lightly golden around the edges. Do not over bake the cookies or they will not be chewy in the center.
