Chocolate Peanut Butter Muffins

Chocolate and peanut butter is one of the most classic combinations. Whats better then choclate peanut butter muffins, ones that are stuffed with peanut butter cups. Moist chocolate muffins, with an ooey gooey center of melted peanut butter cups. This what muffins dreams are made of.

Chocolate Peanut Butter Muffins

2 medium eggs

120 grams whole milk

120 grams vegetable oil

225 grams all purpose flour

25 grams cocoa powder

100 grams brown sugar

100 grams granulated sugar

1/2 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

150 grams peanut butter chips

12 peanut butter cups (mini size)

Peanut Butter Glaze

1 tablespoon peanut butter

75 grams powdered sugar

1-2 tablespoons of milk

Preheat your oven to 375 degrees F. Line 12 muffin cups with paper liners, set aside.

In a large bowl whisk together the eggs, milk, oil together.

In another large bowl, sift together the flour, cocoa powder, brown sugar, granulated sugar, baking powder, baking soda, and salt. With a spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined.

Scoop about 2 tablespoons of batter into each muffin cup. Place 1 peanut butter cup into the center, and top with remaining batter, filling each muffin cup 3/4 full. Sprinkle the tops of each muffin with peanut butter chips.

 Place in the oven and bake for 20-25 minutes or until muffins spring back to the touch.  Transfer to a cooling rack and let cool for about 5-10 minutes before removing from pan. 

To make glaze, mix together peanut butter and powdered sugar, add milk to slightly thin out the glaze.

Glaze muffins once completely cool.
