Peanut Butter and Jelly Oat Bars

Lately I have been putting peanut butter on EVERYTHING. I have always loved peanut butter, but recently discovered Whole Foods Market creamy peanut butter , and the consistency is just the best. These Peanut butter and jelly oat bars are easy to make, so delicious, and you can use whatever flavor of jam you like best.

Peanut Butter and Jelly Oat Bars

80 grams creamy peanut butter

3 tablespoons honey

80 grams unsalted butter, softened

184 grams almond flour

90 grams rolled oats

30 grams all purpose flour

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

300 grams and fruit jam (my favorite is strawberry or raspberry)

Preheat oven to 350 degrees F. Line a 8x8 inch baking pan with parchment paper and set aside.

In a medium size bowl, mix together all ingredients except fruit jam. You can also use an electric mixer for this part if necessary. Press 2/3 of the mixture into prepared pan and bake for 10 minutes.

Spread the jam evenly onto baked oat bars, and top with remaining crumble. Bake for another 10-25 minutes or until crumble is lightly golden brown.

Cool completely before cutting into squares.

*Bars will freeze for 8-12 weeks

*Bars will cut nicer if chilled before hand
