Copycat Homemade Kudo Bars

Anyone else used to love kudo bars when they were around? They were always one of my favorite snacks. The perfect combination of a granola bar and a rice crispy treat, sprinkled with some mini M&M's and drizzled in chocolate, what could be better?

Copycat Homemade Kudo Bars

75 grams Rice Krispie cereal

75 grams rolled oats

70 grams brown sugar

55 grams unsalted butter

70 grams honey

1 tablespoon unsweetened peanut butter or almond butter

100 grams semi sweet chocolate chips

Spray an 8x8 inch baking dish with non stick cooking spray.

In a small saucepan over low heat, stir together butter, brown sugar, honey, and nut butter until melted.

Pour into a medium size bowl and stir in Rice Krispie cereal and rolled oats. Pour into baking dish and press down into an even layer. Sprinkle M&M’s onto the top and lightly press down. Set aside to cool and harden for 1-2 hours.

Melt chocolate chips over a water bath. Set aside to cool slightly. Unmold bars onto a cutting board carefully, bars will be set but still slightly soft. Cut bars into rectangles about 4 inches long and 1 inch wide. Drizzle melted chocolate onto the bars, place in the refrigerator until chocolate is set about 10 minutes.

Store at room temperature. Serve within 2-3 days.
