Funfetti Sugar Cookie Bars

Why make regular cookie bars when you can make Funfetti sugar cookie bars! This recipe is such a fun and easy dessert. It can be done from start to finish in less then an hour.

You can frost these sugar cookie bars with your favorite icing of choice or use my recipe for chocolate fudge frosting. Either way they will be delicious. Sprinkles really do make everything better.

Funfetti Sugar Cookie Bars

113 grams unsalted butter (softened)

150 grams granulated white sugar

1 medium size egg

3 tablespoons milk

270 grams all purpose flour

1 1/2 teaspoons baking powder

100 grams rainbow sprinkles

Chocolate Fudge Frosting

110 grams unsalted butter

40 grams heavy cream

10 grams cocoa powder (sifted)

100 grams powdered sugar

Preheat oven to 350 degrees F. Line an 8x8 inch pan with parchment paper and spray lightly with nonstick cooking spray.

In a mixer with a paddle attachment cream butter and sugar together until light and fluffy. Beat in egg and milk until fully combined. Mix in flour, baking powder, and sprinkles until a dough forms. Press into prepared pan and bake 15-20 minutes until lightly golden around the edges. Cool before frosting

For the fudge frosting, mix all ingredients in a small pot and melt over medium heat. Cool the icing over an ice bath until frosting is spreadable consistency. Spread onto cooled cookie bar and top with more sprinkles. Cut into squares.

Store in an airtight container for 2-3 days. Cookies bars will freeze well with frosting for 4-6 weeks.
