Classic Fudge Brownies

Your search for the perfect fudgy brownie is over. And I don’t use the word perfect to describe many things (maybe a glazed doughnut from Krispy Kreme) but let me get to my point. These are perfectly fudgy on the inside with that shiny crinkly top that we all love. You will never reach for boxed brownie mix again.

Classic Fudge Brownie

6 eggs

480 grams granulated white sugar

370 grams semisweet chocolate chips

240 grams butter

150 grams all purpose flour

30 grams cocoa powder

100 grams milk or semi sweet chocolate chips

Preheat your oven to 350 degrees F. Line a half sheet pan with parchment paper and lightly spray with non stick cooking oil.

Heat the chocolate and butter over a double boiler until melted.
Whisk the eggs and sugar in the mixer until light in color and very fluffy 3-4 minutes.

Pour the chocolate and butter into the egg mixture, adding it all at once and whisk until fully incorporated. Sift the all purpose flour, cocoa powder, and salt into the egg and chocolate mixture and mix just to combine.

Pour into prepared pan and bake for 15-20 minutes or until brownies are set in the center. Once brownies come out of the oven, sprinkle the chocolate chips evenly over the top.

Let cool before cutting.

*These brownies will freeze well for 2-3 weeks
