Let’s kick off the weekend with a refreshing and frosty mocktail, shall we?

Summer cocktails and mocktails are some of my favorite recipes to create, juicy fruits, fresh herbs, what’t not to love.

This drink is super easy and fast to make. The syrup can be made ahead of time and stored in the fridge, this way you always have it on hand and can blend up a quick batch of these nojitos whenever you want, or as my daughter calls them, watermelon smoothies!

What is a Nojito?

A nojito is simply a non alcoholic version of the classic mojito.

It is made of fresh watermelon, mint syrup, fresh lime juice, and ice, and because there is no alcohol, it also makes it a healthier summer drink option.

Tips on making this recipe perfectly

Make sure your watermelon is ripe, the more ripened the melon, the sweeter the flavor.

Use fresh lime juice always! The stuff you buy in the bottle is no good, especially when used in a drink. Regardless of the brand they always taste bitter and overly acidic. Take the time to juice your own limes, it’s worth it in the end.

Freeze your glasses beforehand, this drink has the consistency of a slushy and a cold glass will help it stay that way.

Blend on high speed, there should be so large ice chunks in the drink after being blended. It should have a slushy like consistency once finished.

Watermelon Mint Nojito

Ingredients

Watermelon Mint Nojito
  • 1 1/2 cups watermelon cubed
  • 1 cup of ice
  • 1 lime, juiced
  • 1/2 oz mint simple syrup
Mint Simple Syrup
  • 1/2 cup (120 grams) water
  • 1/2 cup (100 grams) granulated sugar
  • 3/4 cup (25 grams) fresh mint

Instructions

Mint Simple Syrup
  1. In a small saucepan bring water and sugar to a boil. Stir in mint and let infuse for 10 minutes. Strain the mint out and cool the syrup over an ice bath. Store in the fridge for 2-4 weeks
Watermelon Mint Nojito
  1. In a blender, blend all the ingredients until smooth. 
  2. Serve in a chilled glass with a lime wedge garnish and a sprig of mint.
